I never prepared any salad with bread, because I couldn't imagine that soggy bread would be nice. Big mistake! My parents in law, the best amateur cooks I know, prepared Panzanella for a family get-together. With ciabatta. And I love it. Bread soaked in a vinegar dressing is delicious! Even more the day after. It's a new favourite in our kitchen. This recipe comes close to the one we ate, just loose the olives. Try it now, because tomatoes are at their best at the moment.
