This rainy weather asks for a nice cup of tea and warm-from-the-oven cake when the girls come home from school. A lemon-poppyseed-buttermilk cake this time. I often use this simple recipe by Tessa Kiros to begin with. It is low sugar and low fat. When you leave out the berries, you can add other ingredients you like or happen to have in your cupboard. We love this fresh cake, but not all visitors appreciate it, because it's less sweet than you would expect from a cake. You'll have to try to know.
