Eggplant


I wasn't a big fan of aubergines untill this sicilian girl Eleonora came to live in our student-house. She was not a big cook herself, but she phoned her mother in Italy for recipes. And the most delicious italian food came on our table. From her I learned how to prepare aubergines. Since then it is my favourite vegetable. The dish on the picture is not one of her mother's recipes but something alike. Easier to make and tasting almost as good. E-mail me for the recipy if would like to try this ovenbaked pasta.

Mmm, it looks delicious. I have planted aubergines in my little garden last week. I hope I will have a good crop this summer.
